Dinner is served. This Cottage Cheese Chicken Salad recipe is a summertime favorites because it's quick, easy, and perfect for when you're on-the-go.

Cottage Cheese Chicken Salad

Ingredients:

• 1 rotisserie chicken
• 1 small, tart red apple, diced
• 1 celery rib, diced
• 1 cup Essential Everyday^Ⓡ Cottage Cheese
• ⅓ cup chopped toasted pecans
• 3 green onions, thinly sliced
• 2 tablespoons chopped fresh parsley
• 2 tablespoons lemon juice
• 1 tablespoon Dijon mustard
• 8 slices whole grain sandwich bread
• 1 head butter lettuce

Directions:

1. Remove breasts from chicken and discard skin. Dice chicken and place in a large bowl. Reserve chicken thighs for another use.
2. To bowl with chicken add apple, celery, cottage cheese, pecans, green onions, parsley, lemon juice, and mustard. Toss well to combine.
3. Divide chicken salad among half the bread slices. Top with lettuce and remaining bread and serve immediately.
