    • 1 pound chicken breasts
    • 3 cups Essential Everyday chicken broth
    • 1 cup Essential Everyday honey barbecue sauce
    • 1 12 ounce bag Essential Everyday riced cauliflower, prepared
    • 2 cups Essential Everyday mild cheddar cheese
    • 1 cup Essential Everyday thick & chunky salsa

    Optional Garnishes

    • Sliced avocado
    • Cherry tomatoes
    • Fresh Jalapeño
    • Essential Everyday tortilla strips


    1. In a medium sized pot add the chicken breasts and chicken broth and bring to a boil over high heat. Reduce heat to low, cover, and cook for 10-12 minutes, until the chicken is cooked through.
    2. Transfer the cooked chicken breasts to a medium sized bowl and shred using forks. Add the barbecue sauce and mix to combine.
    3. Place 3/4 cup of prepared riced cauliflower into a serving bowl. Top with 1/4 of the shredded chicken mixture, 1/2 cup cheese, 1/4 cup salsa, along with other optional garnishes.
