Ingredients:
- 1 1/2 lbs boneless, skinless chicken breasts, quartered
- 1 16 oz bag Essential Everyday California style vegetables
- 1 16 oz bag Essential Everyday Brussels sprouts, cut in half
- 2 teaspoons Essential Everyday garlic powder
- 1 teaspoon Essential Everyday onion powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 3-5 tablespoons Essential Everyday olive oil
Directions:
- Preheat oven to 400 degrees.
- Lightly coat a baking sheet with non stick cook spray, set aside.
- In a large bowl, combine all ingredients except for the parsley and toss to combine.
- Lay ingredients in an even layer across the baking sheet. Bake for 15-20 minutes, stirring halfway through, or until the chicken reaches an internal temperature of 165 degrees.
- Remove from the oven and garnish with fresh parsley.
